what you need
somewhere between a cake and a loaf, this treat is for when you want ‘just a little something sweet.’ it’s light, zesty and loaded with feel good flavour. we bet it’ll be gone in seconds (we won’t tell).
how to make it:
- steep your tea in boiling water for 10 minutes then let it cool
- preheat the oven to 180°c, then grease or line a loaf tin
- in one bowl, mix flour, baking powder, baking soda and salt
- in another bowl, whisk melted butter, sugar, eggs, yoghurt, tea and citrus zest
- combine the wet and dry ingredients, mix until smooth
- pour the mixture into your loaf tin and bake for 35-40 mins or until golden and a skewer comes out clean
top tip:
drizzle with a glaze (powdered sugar and a splash of the fruity tea) once cool. serve with a dollop of yoghurt and fresh fruit for full café energy.
