what you need

  • Half cup of fruity tea (we recommend mango goodness, night beauty or berry rush)
  • Half cup boiling water
  • 1½ cup plain flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • pinch of salt
  • ½ cup butter, melted
  • ¾ cup sugar
  • 2 eggs
  • ½ cup greek yoghurt or plant-based yoghurt
  • zest of 1 lemon or orange

somewhere between a cake and a loaf, this treat is for when you want ‘just a little something sweet.’ it’s light, zesty and loaded with feel good flavour. we bet it’ll be gone in seconds (we won’t tell).

how to make it:

  1. steep your tea in boiling water for 10 minutes then let it cool
  2. preheat the oven to 180°c, then grease or line a loaf tin
  3. in one bowl, mix flour, baking powder, baking soda and salt
  4. in another bowl, whisk melted butter, sugar, eggs, yoghurt, tea and citrus zest
  5. combine the wet and dry ingredients, mix until smooth
  6. pour the mixture into your loaf tin and bake for 35-40 mins or until golden and a skewer comes out clean


top tip:

drizzle with a glaze (powdered sugar and a splash of the fruity tea) once cool. serve with a dollop of yoghurt and fresh fruit for full café energy.
